In this cultural mash-up, we marry the tropical flavours of Sri Lanka to a traditional Belgian abbey ale. The rich, sweet flavour of treacle made from the sap of the kithul tree is balanced by the tartness of tamarind fruit. Together with the fruity and spicy flavours from Belgian yeast and Czech hops, this beer will make an excellent accompaniment to desserts and South Asian cuisine.

Sri Lanka is fermented with Belgian yeast and bottle-conditioned for natural carbonation, and an extra layer of complexity.  Pour with care to leave the yeast sediment in the bottle.
