We started with a very serious sort of beer – a saison fermented with a mixed culture of brewer’s yeast, brettanomyces and lactic acid bacteria – and we added a silly little party hat on top by dumping passionfruit and guava into the fermentor before dry-hopping with Styrian Celeia and Hallertau Blanc.
The result is a party in your mouth, but it’s not like any party you’ve been to before. You’re not sure who invited their parents to it, but they sure can cut a rug.
