A multi-grain saison fermented with a mixed culture of brewer’s yeast, brettanomyces and lactic acid bacteria, Enology Series No. 01 is our first effort at hybridizing the flavours of beer and wine.
After conditioning in red wine barrels for six months, the beer was transferred onto syrah pomace from the Okanagan’s Painted Rock Winery for further conditioning. The result is intricate vinous flavours interwoven with the complex funk and tartness of a mixed culture saison.
