We brewed Negen for our ninth anniversary to show what a mature, grown-up brewery we’ve become. We’re nine!
Negen is a biere de coupage, a blend of fresh and aged beers. We brewed a saison and fermented it for eight months with a mixed culture of yeast, brettanomyces and bacteria. We then blended the aged beer with a freshly brewed saison, and dry-hopped the blend with Slovenian hops before bottling. The resulting beer is tart and very dry, but also fresh and hoppy.
