Saison conditioned on Cabernet France pomace

Volume: 750 mL
Ingredients: Water, Malted barley, Cabernet Franc pomace, Wheat, Oats, Spelt, Yeast, Hops, Brettanomyces, Lactic acid bacteria

We fermented this multigrain saison with a mixed culture of brewer’s yeast, Brettanomyces and lactic acid bacteria and aged it in oak barrels for two years before transferring it onto malbec pomace from the Okanagan’s Painted Rock Winery for further conditioning. The result is intricate vinous flavours interwoven with the complex funk and tartness of a mixed-culture saison. The Cabernet Franc version pours a bright ruby tint with a lighter palate of summer fruit and berries.
